If I were to make a list of things I miss from Sweden, the soup above (nyponsoppa or rose hip soup) would definitely be on it. Fortunately, it comes in a powder that my mother occasionally sends me so I can make it myself, just adding water. Though I’ve never attempted it, you can make rose hip soup from scratch, here, for instance is a recipe. I don't agree with the person who condemns the powdered rose hip soup version, it actually is quite good! Serve warm or cold, as is or with whipped cream, vanilla ice cream or almond biscotti.
